Cooking - Prepares a full range of nutritious food for approximately 200 plus children per day, supplying them with the USDA required supplements of vitamins and nutrition. Responsible for cooking breakfast, lunch and snacks for the children, and responsible for following the correct portion sizes for all ages. The cook is solely responsible for the measurements and ingredients in the food prepared by herself/himself and the other staff who work in the kitchen. The cook is also responsible for planning special meals such as scheduled events (Parent luncheons, Family Nights, etc.) and modified children's diets as needed.
Food is prepared, handled, and served according to AF instruction, USDA guidelines, Joint Base Charleston guidance; Food and Drug Administration (FDA) guidance; and Council on Accreditation guidance. Under the guidance of the CDC Director and Kitchen Supervisor or Assistant Director, the cook follows preplanned cycle menus and rotates periodically as directed. May prepare and/or assist with preparation of the menus. Adjusts daily menus as required by changing attendance.
Determines quantity of food and supplies required. Submits requisitions sufficiently in advance to ensure adequate supply for items are on hand. Adjusts orders in accordance with anticipated requirements. Washes, thaws, mixes, fries, steams, stews, boils, bakes, mashes, and otherwise prepares soups, meats, fish, chicken, sandwiches, vegetables, etc. Moves heavy garbage cans and assists in unloading supply trucks and storing heavy supplies. Maintains stoves, refrigerators, equipment, and utensils in a safe and sanitary condition. Ensures that dishwasher operation is consistent with sanitation rules. Stores plates, cups, and silverware.
Maintains inventory food, supplies, and equipment on hand. Keeps working area clean and safe. Conducts daily self-inspections and maintains copies of inspections. Keeps labels on food and products updated in stock room, cooler and freezer. Conducts monthly and quarterly inventories. Prepares USDA and FDA reports. Maintains inventory and fills out purchase orders for necessary supplies. Performs other related duties as assigned.
