Performs a variety of tasks such as grilling/frying pancakes, hamburgers, hotdogs, bacon, eggs, sausage, by watching while the items are cooking, turning as required, regulating temperature and removing when done. Measures and weighs ingredients according to recipes or as directed in the preparation of salads, desserts, juices, fruit trays, etc. Prepares toast, salads, salad dressing and sandwiches. Prepares vegetables and fruits for serving according to instructors and/or recipes. Places cooked food in serving dishes in steam carts and food trucks. Washes and cleans kitchen equipment and work area. Keeps refrigerators, grills, equipment and working area clean and sanitary at all times. May be required to collect money, operate a cash register, and prepare Daily Activity Report (DAR) for cash accountability for MWR funds received. May assist in taking monthly inventory. Performs other related duties as assigned.
SKILLS AND KNOWLEDGE REQUIRED
Must be skilled in handling various kitchen cutlery and equipment, from knives to steamers, ovens, grills and fryers. Must be able to follow recipes and combine ingredients for plain or fancy salads and other cooked dishes and have a working knowledge of measurements.
RESPONSIBILITY
This position works under the supervision of a higher graded cook/chef, who spot checks work in progress to ensure procedures are followed and that work is completed within a rigid specified period of time. Problems and questions are referred to the duty cook/chef.
PHYSICAL EFFORT AND WORKING CONDITIONS
Physical activities include, but are not limited to standing, walking, bending, turning, stooping, twisting, reaching, pushing, pulling and light lifting. Some activities are prolonged in nature. The employee will at all times lift up to 45 pounds unassisted, heavier items are with assistance. Exposure to extreme temperatures, due to steam and heat from cooking and dishwashing and walk-in refrigerators/freezers. Working area is subject to noise. The employee is subject to minor cuts, bruises and burns.
SPECIAL REQUIREMENTS
As a condition of employment, the employee must be able to obtain a Health Card prior to first day if work. Afterwards, must be able to successfully pass a Food Handles Sanitation course, thereafter to be updated and maintained annually.
